Chef Surja teaches techniques for cooking fish

West Linn Chef Surja Tjahaja will teach three cooking classes focusing on fish this fall at the West Linn Adult Community Center.
"Fish is a great source of protein," says Tjahaja. "My goal in these classes is to introduce easy to make gourmet meals using sustainably caught fish that can be prepared at home at very affordable prices." Classes cover techniques for preparing and cooking the fish as well as information about the best places to shop for fish in the Portland area.
All classes are held at the WLACC, 1180 Rosemont Road in West Linn, and run from 10 a.m. to 1:30 p.m. The schedule includes:
n Sept. 16 — Javanese-style Pompano. Pompano is very affordable and especially delicious when prepared with exotic ingredients.
n Oct. 14 — Barbecued Thai Fish Curry. Learn to make curry paste the old fashioned way using a mortar and pestle.
n Nov. 4 — Poached White Fish with Beurre Blanc and Pernod Sauce. Poaching fish in the classic French haute cuisine makes a great dish for the holidays.
